Chicken and Dumplings
We have been having temperatures in the 20s in Alabama, so to warm up, I made some yummy homemade Chicken and Dumplings. They really hit the spot. There are so many ways to make dumplings. Everyone has their own favorite. I like these because they are easy and less messy than having to get out the rolling pin, which makes more work for me. I am not going to lie, I actually had two big bowls.
Chicken and Dumplings

Ingredients
- 2 pounds Chicken breast
- 32 oz Chicken Broth
- ½ onion chopped
- For the dumplings
- 3 Cups All Purpose Flour
- ¼ Cup Cooking Oil
- Salt to taste
- Pepper taste
- For the Corn Starch Slurry
- 4 Tbsp Corn Starch
- 1 Cup Water
Instructions
- Place chicken breast in Instapot with about 10 cups of salted water.
- Cook for 30 minutes.
- Release pressure and remove chicken breast from the broth
- Shred the chicken and set aside.
- Add the chicken broth to the water in the Instapot and bring to a simmer.
- Mix your flour, salt, and cooking oil in a large mixing bowl.
- Add water and mix till a soft dough is formed.
- Take a piece of the dough and pinch it between your thumb and index finger and drop into the simmering broth.
- Once all the dough has been added to the pot, make your cornstarch slurry.
- Mix the cornstarch with the water and mix well. You could also put it in a mason jar with thee lid on and shake it till mixed well.
- Pour into the broth.
- Add the chicken back to the pot.
- Simmer about 20 minutes until thickened.
- Enjoy!
