Potato salad is a summer staple of the South.  No picnic or family get together would be the same without a big ‘ol bowl of Tater Salad. There are so many recipes for potato salad and every family probably has their own “secret” recipe.   My sister makes the best potato salad.  She is so sweet because we have a couple of picky eaters in the family and she will make a batch of potato salad, scoop some into a separate container and then add onion and/or eggs to the big batch depending on who will be eating with us that likes it without eggs or onions. Ingredients
  • 6-8 Large Potatoes
  • 2 Eggs
  • 1 Onion, finely chopped
  • 1 to 1½ Cup Mayonnaise
  • ¼ Cup Spicy Mustard
  • ½ Cup Sweet Salad Cubes
  • 2 Teaspoons Salt
Instructions
  1. Wash the potatoes and cut into small cubes.
  2. Place in a large stockpot and add the salt and fill the pot ⅔ with water.
  3. Wash the eggs and place in the stockpot.
  4. Boil potatoes until tender about 15-20 minutes.
  5. Drain the potatoes and remove the eggs.
  6. Place the potatoes in a large mixing bowl.
  7. Rinse the eggs in cold water and peel.
  8. Chop the eggs and add to the potatoes.
  9. Add the chopped onion, mayonnaise, mustard, and sweet salad cubes.
  10. Taste for seasoning and add salt if needed. Afiyet olsun!
