Electric Pressure Cooker Stuffed Zucchini

If you liked my Kabak Dolmasi Stuffed Zucchini recipe, you are going to love my Electric Pressure Cooker Stuffed Zucchini recipe.  Of course, the original recipe is great but this one is even better because you can prep it and forget it.   Since I was using the electric pressure cooker pan, I used a potato to wedge the stuffed zucchini in place.  While potato is not traditionally part of this dish, it sure made it more delicious.

I Love My Faberware Electric Pressure Cooker

Savory Electric Pressure Cooker Stuffed Zucchini served with tangy garlic yogurt.

Ingredients
  • 3 Zucchini (straight as you can get)
  • 1 pound ground beef
  • ¼ Cup Rice
  • 1 Medium Onion, grated
  • 2 Tablespoons Softened Butter
  • 1 Large Potato
  • ¼ Cup Parsley, chopped
  • 1 Teaspoon Cumin
  • 1½ - 2 Tablespoons Dried Dill
  • 2 Teaspoons Salt, (1 Teaspoon for meat mixture, 1 Tsp for the sauce)
  • 1 8oz Can Tomato sauce
  • 4 ounces water
  • Serve with Garlic Yogurt!
Instructions
  1. First, mix the ground beef, grated onion, rice, parsley, dill, cumin, and salt in a large mixing bowl.
  2. Next, cut the ends off the zucchini then cut in half. Using a zucchini corer or a spoon, core out the zucchini. Do not go deeper than 1 inch from the bottom end of the zucchini.
  3. Place the inside of the zucchini around the edges in the bottom of the electric pressure cooker pan.
  4. Stuff each zucchini with the meat mixture.
  5. Then arrange in the center of the pan.
  6. Next, shape the remaining meat mixture into balls and place around the stuffed zucchini.
  7. After washing the potato, cut into ½ inch rounds.
  8. Place the potatoes on top of the meatballs so that the stuffed zucchini is wedged so they do not fall over.
  9. Mix the tomato sauce, water, and 1 teaspoon salt.
  10. Then pour over the stuffed zucchini.
  11. Lock your pressure cooker according to your manufacturer's directions.
  12. Then set the pressure cooker for the Steamed Vegetable setting.
  13. Finally, set the cook time to 25 minutes.
  14. Let your pressure cooker do the work while you have a cup of tea or make the garlic yogurt to serve on your stuffed zucchini.
  15. Let the pressure cooker slow release if you have time. If not, release the pressure valve according to your machines manufacturer directions.
  16. Serve with garlic yogurt. Afiyet olsun!
