Gluten Free Fried Veggie Trio with Spicy Feta Sauce

Since writing my post,  Banana Nut Waffles (which were almost gluten-free), I have been thinking about other ways to use rice flour.  It really makes for a light and crispy coating.   My Gluten Free Fried Veggie Trio with Spicy Feta Sauce will have you licking your fingers.  I served this as a side to some yummy chicken I cooked in the slow cooker and it went great together.  This would be a delicious appetizer as well.  I know I have posted gluten-free recipes back to back.  I am not on a new health kick or anything, I just wanted to have some alternatives for people who are following a gluten-free diet.  Many of the Turkish dishes would be gluten-free, they just may not be listed as being gluten-free.  Check them out by using the search bar.  Hope you like this recipe! Gluten Free Fried Veggie Trio with Spicy Feta Sauce

Ingredients
  • For the Spicy Feta Sauce:
  • 1½ Cup Yogurt
  • 4-5 ounces Feta Cheese
  • 4 Cloves Garlic, Smashed
  • ¼ Cup Finely Chopped Parsley
  • 1½ Teaspoons Dried Mint
  • 1½ Teaspoons Dried Dill
  • 1½ Teaspoons Aleppo Pepper
  • 1 Lemon, juiced
  • 1 Teaspoon Salt
  • For the Veggies:
  • Cooking oil (Amount depends on the pan you use. I used about ½ Cup.)
  • 2 Cups Cauliflower, cut into small pieces
  • 2 Cups Okra, ends trimmed and cut into small pieces
  • 1 Medium Zucchini, cut into 1 inch rounds then quartered
  • 1 Cup Rice Flour
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Paprika
Instructions
  1. Using the salt, smash the garlic into a paste.
  2. Place in a mixing bowl.
  3. Crumble the feta cheese. Reserve 1-2 Tablespoons for garnish and add the rest of the cheese to the mixing bowl.
  4. Stir in ½ Cup of the yogurt, the salt and the dried spices. Mix well.
  5. Add the rest of the yogurt, parsley and lemon juice.
  6. Stir well then garnish with reserved cheese and a pinch of Aleppo pepper.
  7. Wash the vegetables and shake off excess water.
  8. Cut into small pieces.
  9. Add cooking oil to a frying pan and heat over medium high heat.
  10. Add the rice flour, baking soda, baking powder, salt and spices in a gallon ziploc bag. Shake well.
  11. Working one vegetable at a time, place in the bag to coat well.
  12. Test the oil by dropping one piece of vegetable into the hot oil.
  13. If it is hot enough (aka sizzling hot), shake the excess rice flour mixture from the vegetables and place into the frying pan. Fry 5-6 minutes or until golden brown. Drain on a plate lined with paper towels.
  14. Repeat this process with each vegetable.
  15. Serve with Spicy Feta Sauce. Afiyet olsun!
