One of my favorite kinds of dolmas are etli kabak dolması which is zucchini stuffed with meat.  I decided to make some tonight.  My sister, Kim had given me some big beautiful tomatoes that she had bought at Smith Sisters produce stand in Attalla.  I thought they would look really good with the zucchini so I used them as well.  I think the tomatoes give a nice visual appeal.  These dolmas are delicious on their own however they are even better with garlic yogurt.  Hope you enjoy my recipe.  Afiyet olsun!

Ingredients
  • 1 pound Ground Beef 80/20
  • ⅓ Cup Rice
  • 1¼ Tablespoons Salt
  • 1 Teaspoon Dill Weed
  • 1 Medium Onion, grated
  • 5 Zucchini
  • 3 Tomatoes
  • 2 Tablespoons Olive Oil
  • Water
Instructions
  1. Cooking Directions
  2. Wash your tomatoes and zucchini.
  3. Cut the zucchini in half and core out the center making sure not to go down too far. Leave about a half inch in the bottom. You can save the part you take out for a different recipe.
  4. Cut the top off the tomato and core out. Chop the part that you took out of the center and put in a large mixing bowl.
  5. Grate the onion and add to the mixing bowl. Add the ground beef, rice, dill and salt.
  6. Mix well and stuff into the zucchini and tomatoes. Replace the top that you cut off the tomato.  If you happen to have any leftover meat mixture, you can shape it into a kofte shape.
  7. Drizzle the olive oil over the top.
  8. Place in a pan and pour in water about half-way up.
  9. Bring to a boil, then cover and reduce to low.
  10. Cook about 40-45 minute or until the meat is cooked.
  11. Serve hot with
  12. garlic yogurt
  13. Optional - You could add 1 Teaspoon tomato paste to the meat mixture and 1 Teaspoon tomato paste to the hot cooking water.
