Around my house, I am known as the “Queen” of Sandwiches. I am not kidding. I can have some ingredients in the fridge that look like they might be sandwich material and my daughter might say something like “Were you planning on making a “sandwich?” Now I am not talking about two pieces of bread with a couple slices of deli meat and a little cheese sandwiches. Although I do make those well too ;-)! I mean a hearty, cheesy, crispy on the outside – light and fluffy on the inside bits of heaven kind of sandwich.

People who know me, know that I show my love through food.  When I am cooking for my family and friends or anyone really, I use only the best ingredients and I DO NOT SKIMP on anything!  I want people to leave my table feeling satisfied.  Unfortunately, I cannot make sandwiches for all of ya’ll (Southern Slang for you all) so just use the recipe for my Beef Short Rib Steak Sandwich and you will see what you are missing at my house.

Ingredients
  • ¾ Pound Beef Short Ribs, boneless
  • 1 small onion, sliced in half-moons
  • 1 Cup Sweet Bell Pepper, red, yellow and orange
  • To taste Salt
  • To taste White Pepper
  • 1 Dash Paprika
  • 3 Tablespoons Olive Oil
  • 4 Sub Buns
  • 1 Cups Cheese (Feel free to add more cheese!)
  • 4 Tablespoons Mayonnaise
Instructions
  1. Slice the onions and peppers in thin strips.
  2. Heat the olive oil and add the peppers and onions.
  3. Slice the beef into thin strips.
  4. Add to the pan.
  5. Stir well. Add the salt, white pepper and paprika.
  6. Cook about 5-6 minutes.
  7. Heat broiler while you cut the bun down one side leaving the top and bottom attached.
  8. Spread 1 Tablespoon Mayonnaise on each bun.
  9. Distribute the meat, onions and peppers evenly between the 4 buns.
  10. Sprinkle ¼ Cup of cheese on each bun and place under broiler.
  11. Broil for 2-3 minutes until cheese is bubbly. Serve piping hot.
