Spinach Feta Puff Pastry Pizza
- ½ pound Puff Pastry Dough, thawed (in USA ½ of Pepperidge Farm package)
- 10 ounces Frozen Spinach, thawed and excess moisture squeezed out
- 4 ounces Feta Cheese
- 1 Cup Shredded Italian Six Cheese Blend (or any cheese you like)
- ½ Small Onion
- Dash Salt
- Pre-heat oven to 350 degrees.
- Slice ½ of small onion into thin half moons and set aside.
- Squeeze the liquid from the spinach and place in bowl.
- Add the feta and mix through.
- Take the thawed dough and roll into a rectangle 9x13.
- Line quarter size (9X13) baking tray with parchment paper.
- Lay dough on parchment paper and make small pricks with a fork.
- Sprinkle ⅓ Cup shredded cheese on the pastry and bake for 5 minutes.
- Remove from oven and spread the onions evenly onto the pastry.
- Evenly distribute the spinach and feta mixture.
- Top with remaining ⅔ Cups shredded cheese.
- Bake for an additional 15 minutes.
- Remove from oven and cut into rectangles.
