Sprinkle the yeast over the water and then stir in the honey.
Leave to proof for 5 - 10 minutes.
Place the bread flour and salt in a large mixing bowl.
Stir in the salt. Make a well in the center of the flour.
Once the yeast has proofed, pour the yeast into the well.
Mix until thoroughly combined and then knead for 5 minutes.
Cover the bowl with a damp cloth and place in a warm place to rise for 20 minutes to 1 hour.
Sprinkle a little flour over the risen dough and turn it out onto a work space.
Roll the dough into a log and cut into 8 equal pieces.
Shape into balls and cover with a clean towel to rest for about 30 minutes.
Heat the oven to 500 degrees and place a small ovenproof dish filled with water in the bottom rack..
Once your oven is hot, sprinkle your work surface with flour and roll each ball of dough out into a round shape. Place 3-4 pieces of dough on a baking rack and place into the oven.
Bake for 5 minutes until puffed and golden.
Continue cooking in this manner until all the pitas are cooked.
Eat immediately or you can cool and store in a paper bag for a couple of days.
