Smoked Sausage and Kale Soup

Ingredients
  • 5 Tbsp Olive Oil
  • 2 Medium Onions, Chopped
  • 2 Cloves Garlic, Chopped
  • 8 ounces Kale, Washed and Chopped
  • 6 Potatoes, Washed and Cubed
  • 4 Carrots, Washed and Cubed
  • 2 Celery Stalks, Washed and Chopped
  • 1 pound Smoked Sausage cut into ¼ to ½ inch rounds or you could use Sucuk
  • ¼ Cup Rice Flour or Corn Starch
  • 2 14.5 ounce cans chicken broth, or equal amount water
  • 12 Cups Water
  • 1 Tbsp Salt
  • 1 Tsp ground mustard
  • ⅛ Tsp black pepper
  • 1 Cup Milk
  • 6 ounces Sharp Cheddar Cheese, grated
Instructions
  1. In a large stockpot, saute the onions, garlic and celery in the olive oil until translucent.
  2. Add in the Smoked Sausage and saute until lightly browned.
  3. Add the chicken stock.
  4. Mix the rice flour or corn starch with the water and add to the pot.
  5. Add in the cubed potatoes and carrots.
  6. Add the kale and stir well.
  7. Cover and cook until potatoes are fork tender.
  8. Stir in the salt, ground mustard, black pepper, milk and the cheese.
  9. Cover and simmer for 20 minutes.
  10. Serve with a nice crusty bread. Afiyet Olsun!
