Smoked Sausage and Kale Soup

- 5 Tbsp Olive Oil
- 2 Medium Onions, Chopped
- 2 Cloves Garlic, Chopped
- 8 ounces Kale, Washed and Chopped
- 6 Potatoes, Washed and Cubed
- 4 Carrots, Washed and Cubed
- 2 Celery Stalks, Washed and Chopped
- 1 pound Smoked Sausage cut into ¼ to ½ inch rounds or you could use Sucuk
- ¼ Cup Rice Flour or Corn Starch
- 2 14.5 ounce cans chicken broth, or equal amount water
- 12 Cups Water
- 1 Tbsp Salt
- 1 Tsp ground mustard
- ⅛ Tsp black pepper
- 1 Cup Milk
- 6 ounces Sharp Cheddar Cheese, grated
- In a large stockpot, saute the onions, garlic and celery in the olive oil until translucent.
- Add in the Smoked Sausage and saute until lightly browned.
- Add the chicken stock.
- Mix the rice flour or corn starch with the water and add to the pot.
- Add in the cubed potatoes and carrots.
- Add the kale and stir well.
- Cover and cook until potatoes are fork tender.
- Stir in the salt, ground mustard, black pepper, milk and the cheese.
- Cover and simmer for 20 minutes.
- Serve with a nice crusty bread. Afiyet Olsun!
