Leftover Chicken, Chickpea & Broccoli Pilaf
Ingredients
  • 1½ Cups Long Grain Rice(I use Jasmine . . . it's the best), washed and drained
  • 2 Tablespoons Olive Oil
  • ½ Onion, chopped
  • 1 Cup chopped sweet peppers, red, yellow and orange
  • 1 Cup leftover broccoli
  • 1½ - 2 Cups leftover chicken
  • 2 Cups leftover chickpeas or 1 small can
  • 3½ Cups Chicken Stock
  • Salt To Taste
Instructions
  1. Chop the onions and peppers and saute in the olive oil.
  2. Add in the rice and saute 3-5 minutes.
  3. Add the broccoli, chicken and chickpeas and stir well. Cook 1-2 minutes then add the chicken stock and salt.
  4. Bring to a boil, lower heat to medium low and simmer covered for 18 minutes.
  5. Remove from heat and rest for 5 minutes.
  6. Fluff with fork and serve.
