Leftover Chicken, Chickpea & Broccoli Pilaf

- 1½ Cups Long Grain Rice(I use Jasmine . . . it's the best), washed and drained
- 2 Tablespoons Olive Oil
- ½ Onion, chopped
- 1 Cup chopped sweet peppers, red, yellow and orange
- 1 Cup leftover broccoli
- 1½ - 2 Cups leftover chicken
- 2 Cups leftover chickpeas or 1 small can
- 3½ Cups Chicken Stock
- Salt To Taste
- Chop the onions and peppers and saute in the olive oil.
- Add in the rice and saute 3-5 minutes.
- Add the broccoli, chicken and chickpeas and stir well. Cook 1-2 minutes then add the chicken stock and salt.
- Bring to a boil, lower heat to medium low and simmer covered for 18 minutes.
- Remove from heat and rest for 5 minutes.
- Fluff with fork and serve.
