Chicken and Dumplings

Savory Chicken with soft noodles in a hot, delicious broth.
Ingredients
  • 2 pounds Chicken breast
  • 32 oz Chicken Broth
  • ½ onion chopped
  • For the dumplings
  • 3 Cups All Purpose Flour
  • ¼ Cup Cooking Oil
  • Salt to taste
  • Pepper taste
  • For the Corn Starch Slurry
  • 4 Tbsp Corn Starch
  • 1 Cup Water
Instructions
  1. Place chicken breast in Instapot with about 10 cups of salted water.
  2. Cook for 30 minutes.
  3. Release pressure and remove chicken breast from the broth
  4. Shred the chicken and set aside.
  5. Add the chicken broth to the water in the Instapot and bring to a simmer.
  6. Mix your flour, salt, and cooking oil in a large mixing bowl.
  7. Add water and mix till a soft dough is formed.
  8. Take a piece of the dough and pinch it between your thumb and index finger and drop into the simmering broth.
  9. Once all the dough has been added to the pot, make your cornstarch slurry.
  10. Mix the cornstarch with the water and mix well. You could also put it in a mason jar with thee lid on and shake it till mixed well.
  11. Pour into the broth.
  12. Add the chicken back to the pot.
  13. Simmer about 20 minutes until thickened.
  14. Enjoy!
