Ramadan Pidesi is a soft and puffy pide bread that is made in Turkey during Ramadan. This is a recipe so you can make it at home if you are not lucky enough to be in Turkey to eat this delicious bread.
Ingredients
  • 4 Cups Flour
  • 1 Cup Warm Milk
  • ½ Cup Warm Water
  • 2 Tablespoons Butter, melted
  • 1½ Tablespoons Yeast
  • 1½ Teaspoons Salt
  • 1 Tablespoon Honey
  • 2-3 Tablespoons Olive Oil
  • 1 Egg
  • 2 Tablespoons Water
  • 2 Tablespoons Nigella Seeds also known as Black Sesame Seeds
Instructions
  1. Heat the milk to about 100 - 110 degrees F. You should be able to keep your pinky finger in it without burning.
  2. Add the butter, honey and yeast and mix well.
  3. In a large mixing bowl, mix the flour and salt.
  4. Make a well in the center and add in the yeast mixture.
  5. Work the dough in with your hands until it is soft and elastic. About 10 minutes.
  6. Drizzle a little olive oil over dough, cover with plastic wrap and a damp cloth. Leave in a warm place to rise for about 25-30 minutes.
  7. Turn oven on to 450 degrees.
  8. Uncover dough knead again for about 5 minutes. Cover again and let rest for 15 minutes.
  9. Put a little oil on your pan.
  10. Cut the dough in half. Place each one on your pan and shape into two round flat pides.
  11. Use your fingers to make indentations around the edge of the dough like a circle, then indentations in the center.
  12. Make the egg wash by mixing 1 egg and 2 Tablespoons water. Mix well.
  13. Brush a little olive oil on each pide and then brush each one with egg wash.
  14. Sprinkle each pide with the Nigella seeds.
  15. Bake for about 25 minutes until golden brown. Serve warm. Afiyet olsun!
Notes
I used my cast iron skillet to make this bread but you could use a pizza stone or just a regular baking sheet. I heated the cast iron skillet with a little olive oil before placing the dough in the skillet, shaping it, brushing with egg wash and topping with Nigella seeds.
