Chicken with Okra and Tomatoes

Delicious Chunks of White meat chicken stewed with okra and tomatoes!
Ingredients
  • 1½ Pounds Chicken Breast, cubed
  • 1 Large Sweet Yellow Onion, roughly chopped
  • 2-3 Cloves Garlic
  • 4 Tablespoons Olive Oil
  • 8 ounces okra, fresh or frozen
  • 32 Ounces Diced Tomatoes, or 2 pounds fresh tomatoes, diced
  • Salt, Black Pepper and Crushed Red Pepper to taste
Instructions
  1. Heat olive oil in a large stockpot.
  2. Chop the onion, add to pot and saute until translucent about 5 minutes.
  3. While the onion is cooking, cut the chicken into 1 inch cubes and then add to the onions.
  4. Saute about 6-8 minutes.
  5. Smash the garlic on a cutting board and chop finely. Add to the chicken and onions. Cook for 1-2 minutes.
  6. Then add the okra and tomatoes and stir well.
  7. Add salt and pepper to taste (I use about a teaspoon or so salt and a pinch of black pepper and crushed red pepper).
  8. Cover the pot with a lid and reduce heat to low.
  9. Simmer for 30 minutes.
  10. Serve with rice or mashed potatoes.
